The Story of Chief

Many years ago, Nella and I (Matt) owned a small restaurant and tavern (Time Out Sports Cafe) in Manville, NJ. We were married a few years later and decided that we wanted to start a family. So together we made the choice and left that business behind.

Fast forward 27 years and three kids later (Maria, Rose and Nick) the dream of getting back into the restaurant business became a conversation I needed to have.

I approached Nella and shared with her an idea of starting up a small restaurant specializing in build your own cheesesteaks! She agreed, and so we started on the path of opening our own business.

Our family knew it needed to be located in Middlesex because we ourselves have deep roots in town and the business would be named after my brother, Mark "Chief" Colacci. Marky or Chief as most town people know him, exudes Middlesex and is an inspiration to all of us. We then agreed to chase the dream, and we knew, not only was this going to be an experience for our family but also a legacy for my big brother!

At that moment, Chief's Steak Shop was born!
